1. Pasta Salad
You can't go wrong with this pasta salad! Just add pasta, cucumbers, olives, sun dried tomatoes, feta cheese, bell peppers, lettuce, tomatoes, red onion, and creamy avocado pieces. For the finishing touch, add some pineapple slices on the side.

2. Stuffed Peppers
There are so many different recipes for stuffed peppers. You can buy regular bell peppers at your local supermarket and add what you like! These peppers can be stuffed with sweat potatoes, quinoa, or rice. After baking the peppers, let them sit and cool for a couple minutes before adding to your lunchbox. You can also include yogurt, rice cakes, or snap peas for a little snack.

3. Chicken and Rice
